another baking spree
hey people! do you miss me?i can't even recall when was the last time i blogged. but for the record, i tried. i attempted to but i never quite got to the end of it, i was just tooooo exhausted and tooooooooooo lazy :P
Research is fun and flexible, very self directed and full on if one is keen (which i know you know i am) I have been doing quite a bit of work lately. and having SALP doesn't really help but i guess this is best time for me doing SALP.
i will talk about research on another post because now the only thing i am interested in talking about is baking. yes babeh, baking, baking and MORE baking!
i can't remember where i ripped this recipe from so there you go:-
Ingredients
300g self-raising flour
150g golden caster sugar
1 egg1 tsp vanilla extract
225ml milk
50g butter, melted
100g fresh raspberries
75g chopped white chocolate
Method
1. Preheat the oven to 200C. Cut greaseproof paper into 15cmx15cm squares and push, creasing the paper to fit, into a muffin tin.
2. Sift the flour and baking powder into a large bowl and stir in the sugar. Crack the egg into a separate bowl and whisk in the vanilla extract, milk and melted butter.
3. Stir the liquid into the dry ingredients with the raspberries and chocolate. Take care not to over-mix, no more than 10-15 strokes.
4. Spoon the mixture into the cases and bake for 30 minutes or so until well risen and just firm.
it's a fairly easy cake to bake and it tastes H.E.A.V.E.N.L.Y. i am serious.
ahh i feel better now.
