Happy Baking and Happy New Year

Hey there, how are you?

I am good.

Because i finally get to satisfy my baking crave

Photobucket

and when i say there is no better way to get ready for a brand new year than baking

Photobucket
i mean it :)
*
i baked a cheesecake, a fruit tart and muffins because we had guests coming on new year's eve
there was A LOT of stuffs involved
Photobucket
just like some complicated and messy and scandalous affairs

Photobucket
affairs between the very healthy
Photobucket
and extremely evil food.
First up, Espresso Fudge Cheesecake by Smitten Kitchen (who else?)

Photobucket
and this time, i used 2 packets of double chocolate chips cookies for the crust. the recipe calls for chocolate wafers but i can't find any from my local supermarket. and i was too busy to make any.
*
Question: What does chocolate wafer look like anyway? like Chipsmore?
Photobucket
mix everything in a food processor (which i dun have)
and u will end up with a perfect crust (but mine was perfect toooooo) *beams*
Photobucket
what makes this recipe so special (at least i think so) is the fudge/choc ganache.
i am a sucker for chocolate.
i really am.
*
and my friend, the amount of creamcheese that goes into this cake is
Photobucket
INCREDIBLE
*
i am glad that i don't like cheese
i really am
Photobucket
KitchenAid is my life long best friend.
Photobucket
can you see that little bottle of Hennessy XO at the background? well i don't have any Kahlua. and all alcohol taste the same to me so XO was the way to go :p
Photobucket
bake the creamcheese filling for 1 hr ++ until the cake cracks.
literally
Photobucket
cool the cake down and cover the cake with a layer of 'concealer' - sour cream in this case
garnish the cake with some leftover chocolate ganache and there you go
Photobucket
this cake really takes ages to assemble so remember to make ahead, make ahead and make ahead.
Photobucket
and please only bake this for someone really special, because it really does take awhile to make, and when i say a while, i mean 8 hours, possibly 9 or 10 or 12 hrs. not because it's complicated but because it requires a fair bit of mixing-chilling-mixing-baking-freezing-mixing-baking-freezing-frezzing-waiting-freezing-waiting-granishing-and-waiting. u get the idea. oh and the cleaning up *shivers* thank god i din make this when i was in melbourne. so people, only make this for VIPs in ur life, like you mother.
*
P.S. i dunno what it tasted like because i dun cheese remember? but it does look very presentable :p doesn't it?
*
and i made this Pear and Almond Tart again!

Photobucket
because i like making tart, and i like pear, and i like almond.
Photobucket
and because i have a proper tart mold
Photobucket
and have i told u that i am currently in love with almond?
Photobucket
almond filling into sweet crunchy baked tart

Photobucket
and succulent halved pears
Photobucket
nicely arranged on the top
Photobucket 8
how could you NOT love baking
how could you?
how could you?
*
and lastly~
Photobucket
it's good to be home!
*
HAPPY 2010 PEOPLE!

Photobucket
bowling

because mum is really good at it
and dad is good at it as well
sis can play pretty well
and i SUCK when it comes to bowling
=.=
and this

Photobucket
this is my greastest establishment since i come back
Photobucket
it's a scarf i knitted for mum
Photobucket
an exceptionally easy to make scarf
Photobucket

50th AMSA Convention - Take 2

Tuesday

Hey People, meet Professor Vinay Kumar
every medical student knows Vinay Kumar. well at least every body who did their PBL because Robbin and Cotrans Pathology Textbook is like a bible that solves every medical mystery and keeps you alive and looks less foolish in your PBL. (okay i admit i exaggerate a little) and Professor Kumar just happen to be their editor.
*
now you get how important and famous he is among us geeky medical students?
i quote mel "this is as close as we can get to a medical celebrity" how true is that?!
*
and on the same day, we had a panel discussion on medical students welfare as well
attended were from left to right
Jamie Alexander, Vice Presidenr External of AMSA
Tiffany Fulde, President of AMSA
President of New Zealand Medical Student Society whose name is unknown to me and was labelled as the eye candy on the panel by Jamie Alexander, on stage, in front of everyone (yes u hear me right) i wonder what past do they share *smirk*
and Medical Deans from Bonds University, University of Griffith and Queensland University (in no particular order)
and some one else.
*
and then we were given a talked by Perry Cross
a young man who became a quadriplegic after a sport accident when he was a teenager who is now advocating on research to cure if not treat paralysis. We were given an insight of what it's like to feel unabled and were also told about how important hope is for patients. it was those kind of talk that get you thinking and appreciate what you've got.
*
in the afternoon, it was workshop time! and mel and i decided to go to -->

Basic Suturing!
it was a very hands-on experience and we had it all!
*
trotters with a longitudinal incision at the front
CHECK!
*
experienced surgeon teacher
CHECK!
*
dedicated students

CHECK!

AND CHECK!

honestly i had never enjoyed sewing that much before in my life! i was so reluctant to leave the room actually. but thank god mel dragged me out, or else i will be the most hated people on earth because apparently there were a LOT of people waiting outside to get into the 2nd session. it was the best time of my life!!!
*
Social Night:
Theme: Renaissance
Club: The Met
and this time we managed to get into the club
and it was the best social night of that week. at least the music was dance-able. we had a great time and danced a little before we headed back to our ever so comfy apartment. and and and we had CUP NOODLES for supper, i know it was unhealthy but still *grin*

Next Up - EMC and half naked competitive hot future doctors

50th AMSA Convention - Take 2

Monday

it was the grand opening of the 50th AMSA Convention. and i was surprised that many people actually turned up for that event. especially after the very late night out on Sunday. But anyway, the point is, it was indeed a very GRAND opening.
this is the the National President of AMSA Tiffany Fulde
and the saying that you can either only have the brain OR the look is so not true. some poeple just have it all.
*

and so if she the 2009 Brisbane AMSA Convenor Elizabeth Hayem

The Governor of Queensland, Her Excellency Penelope Wensley was invited to the Opening Ceremony.
and she is one remarkable woman. It will take me an hour to write down what she has achieved (and i dun have that patience) so i suggest you utilize wikipedia. :) She gave us a very inspiring talk on health issues *duh* but it was a shame that i kind of tuned off 30 mins into her speech. i was still receovering from my jet lag you see. *excuse excuse and more excuses*
*
Speakers on board were:
Lincoln Hall
a famous Mt. Everest Survival who lost half of his distal phalanx to frost bite when he was left to die at Mt Everest and still doing rock climbing despite the fact that his touch sensory has greatly decreased since then.
*
Nick Earls, a doctor turned writer
the funniest speakers of all. he told us stories about his life as a medical student, how he couldn't live up to his mother's expectations, who is also a doctor herself, expectations such as having a human liver thrown at him while doing dissection, expectation of not studying too hard as a young medical student. it was good fun. oh and he also told us baout how he got through med school, more specifically passed his last exam to become a doctor, by divine intervention. it somehow involved a pope. and it was the most unbelievable funny story i have ever heard.
*
next up, Tania Major
the advocate for indigenous health. she is young and bold. some one who you really have to look up to.
*
and last but not least.
Social Night.
Theme: Ancient Civilization
Club: The Chalk
mel was refused entry into the club. reason - malaysia ID is not recognizable in Brisbane. oh i mean the Chalk in Brisbane. we had no problem going to other venues (of course after having to point out that our birth date is incorperated into our ID number and 890307 stands for 7th March 1989 etc. every single time). Anyway, we were stucked outside the club, with a very drunk AMSA delegate so we decided to just leave and headed out for dinner instead.
and i am glad we did. it was a quiet night out with no hectic music people randomly making out.
and decent food too!
have i told u that the day before i had the worst fried rice ever. it was more like steamed rice, soaked into oil, mixed with half cooked peas and carrots, 3 prawns and some very few scrambled egg DEBRIS. that's what it was and i din exaggerate a bit. not even a bit bit. so i really really enjoyed the dinner ;)
